ABOUT THE PRODUCT:
Stone-ground khapli wheat flour (Emmer wheat flour) is a staple of the mountain diet. Emmer wheat is rich in fiber, protein, magnesium and other vitamins. It is a complete protein source when combined with legumes, which makes it an excellent addition to a vegetarian diet or for anyone looking for a plant-based high-protein food source. It is among the best wheat varieties to make rotis as well as bread or pasta at home.
The highlight of the flour that we are bringing to you is that the flour is milled in traditional water-powered stone flour mills, called gharatlocally. Flour ground in these traditional mills are prized for retaining all the nutritious goodness of grains because these mills slowly grind the grain without heating them due to friction. Emmer wheat flour is highly beneficial for diabetics and those that want wheat flour with low gluten.
You can also mix 30-50% finger-millet flour and make multigrain rotis.
Emmer (khapli) wheat in the upper Tons Valley, Uttarakhand:
Wheat is a winter crop in the upper Tons Valley. Wheat is sown in the month of November and harvested in summer in then month of June. Communities here sow heirloom seeds of emmer wheat which have been handed down through generations. Emmer wheat is among the oldest wheat varieties in the world. Farmers who have wheat which is surplus to their annual food and seed purpose, sell to earn money. We are supporting these hard working farmers by finding a fair market for their wheat and adding value to it by processing it to flour in local traditional flour mills. We pay a fair price that compensates them for growing wheat in remote fields which don't even have access to a road. The harvest has to be brought on mules to the nearest road and then transported for milling and then packed in our processing center.
Our wheat is completely organic, grown using only natural compost and cow manure. No inorganic fertilizer or chemical pesticides are used. We are in the process of helping these farmers getting their produce certified organic very soon.
