Stone-ground roasted amaranth (choulai) flour is a staple of the mountain diet. Amaranth flour is rich in fiber, iron, protein, magnesium and other vitamins. It is a complete protein source, having the highest protein content among all cereal flours.  When combined with legumes, it is an excellent addition to a vegetarian diet or for anyone looking for a plant-based high-protein food source.

We roast the amaranth grains over a low wood fire before milling them, giving the flour an exquisite artisanal flavour.

The highlight of the flour that we are bringing to you is that the flour is milled in traditional water-powered stone flour mills, called gharat locally. Flour ground in these traditional mills are prized for retaining all the nutritious goodness of grains because these mills slowly grind the grain without heating them due to friction. The flour is gently ground over two or three days. (Watch a video of a traditional flour mill in action here:

Amaranth flour can be used by itself to make gluten-free rotis or you can also mix 30-50% wheat flour and make multigrain rotis. You can also add a portion of finger-millet flour to add another dimension to the nutirition.

Amaranth (choulai) in the upper Tons Valley, Uttarakhand:

Amaranth -- one of the main grain summer crops in our region. It is one of the oldest grains in the world, and was first cultivated by the people of South America. The root word ‘amara’, in both Greek and Sanskrit, means eternal or deathless. In India, the amaranth is also known as ‘ramdana’, or god’s own grain. The amaranth grows all over India but the Himalayan regions have become a mainstay for its cultivation. Amaranth is a hardy crop, that requires very little water and gives a very high and nutritious yield of both fibre and grain. Due to its high nutiritiion and energy content, amaranth is favoured by farming communities in the mountains as part of their daily meal. A traditional farmer's breakfast in our region almost always contains amaranth.

Farmers who have amaranth which is surplus to their annual food and seed purpose, sell to earn money. We are supporting these hard working farmers by finding a fair market for their amaranth and adding value to it by processing it to flour in local traditional flour mills. We pay a fair price that compensates them for growing amaranth in remote fields which don't even have access to a road. The harvest has to be brought on mules to the nearest road and then transported for milling and then packed in our processing center.

Our amaranth is completely organic, grown using only natural compost and cow manure. No inorganic fertilizer or chemical pesticides are used. We are in the process of helping these farmers getting their produce certified organic very soon.
