Tons Valley Special Rajma Chawal Combo (all-in-one) is a mountain secret from our upper Tons Valley! 

For the first time ever, we bring you all the ingredients to prepare rajma like how we do in the Tons Valley -- in one combo!

In the summer shepherds in our region take their flock of sheep and goats to the vast high-altitude Himalayan pastures. In that environment, where temperatures are barely above freezing even in summer, they need warm food that makes them feel at home. Rajma is a favorite, because it is dense, rich in proteins and gets made into a soupy-dal that is perfect for the ambience, 

In that harsh environment, it is impossible to carry a multitude of ingredients to make rajma, so what is used is a very simple recipe - two spoons of mustard oil, garlic, red chillies, salt, seasoning (chora/angelica glauca) and rajma. 

The shepherds always have a fire going at their camp, where rajma is left to slow-cook all-day. When they return with their flock, the cooked rajma is rapidly prepared with the seasoning. This soupy-rajma is eaten with rice and rotis.  

This form of preparing rajma is common across agricultural households in our region as people need to prepare food quickly after a long hard day of work.

Our combo gives you all the ingredients to prepare rajma exactly this way - fresh organic rajma, organic red rice and our masala that gets the rajma prepared in 3 steps without any additional tomatoes, onion, chillies, garlic etc.

This method of preparing rajma is the fastest & simplest and probably purest & healthiest!

Contents Of Combo

  • 500 gms each of Long Red Capsule, Small Red Capsule, Long White Harshil & Long Red Chitra Rajma.
  • 2 KG Organic Chad Dhan Red Rice
  • 100 gm packed of our speciality Instant Himalayan Shepherd Rajma Masala. Contains the herb angelica glauca, ground with pink rock salt, red chillies and fresh organic mountain garlic. 

SUGGESTED ADDITION: Buy 500 gms of our awesome Himalayan Mountain Desi-Ghee with this combo!

Cooking Chad Dhan Red Rice: Wash rice in running water. Use 1.5 parts water to cook 1 part rice in pressure cooker. Cooking time is same as common rice varieties.

Rajma in 3 steps:

  1. Soak 100 gms rajma for 4-5 hours minimum. You can use any rajma variety. Pressure cook for 3-4 whistles till the beans are soft.
  2. Heat mustard oil and sautee some jeera (cumin seeds).
  3. Add the cooked rajma and 1.25 TSP of our Instant Himalayan Shepherd Rajma Masala and boil for 2-3 mins.

    (Adding onions, tomatoes, green chillies, garlic, ginger etc is entirely optional)

    Since the base of our masala is salt, please don't add extra salt at any point during the cooking process.

    IMPORTANT NOTE: 

    Chora (angelica glauca), by itself is a very pungent and intense herb. It needs to be used in very careful measures to obtain optimal taste. We have used rock salt as a base to grind the chora, garlic and red chillies on a traditional stone silbatta. Our local staff have ensured that the optimal ratio of chora is used along with red chillies and garlic. The suggested masala quantity for 100 gms of rajma is 1.25 TSP, which you can adjust according to taste.

    Organic rajma in the upper Tons Valley, Uttarakhand: 

    Rajma is one of the staple food crops in our valley. Almost all farmers sow rajma as it is the main source of vegetable protein in our local cuisine. Farmers who have rajma which is surplus to their annual food and seed purpose, sell to earn money. We are supporting these hard working farmers by finding a fair market for their rajma. We pay a fair price that compensates them for growing rajma in remote fields which don't even have access to a road. The harvest has to be brought on mules to the nearest road and the transported to our processing center.

    Our rajma is completely organic, grown using only natural compost and cow manure. No inorganic fertilizer or chemical pesticides are used. We are in the process of helping these farmers getting their produce certified organic very soon.
