Wild Himalayan Fig (Timla) Pickle is a special from our mountains! The wild himalayan fig tree (ficus palmata) grows extensively in the western himalayas till an altitude of 1550m. These trees are found in the lower Tons Valley and have been consumed for generations.
The figs are eaten ripe or preserved as a pickle when they are raw. This fig is considered very healthy in Ayurveda as it is supposed to have anti-bacterial and anti-inflammatory properties.
The harvested figs are cooked slightly to soften them up before they are pickled. They have a slightly sour and acidic taste closer to raw mangoes. This pickle comes with a gravy so it is especially yummy to eat!
This summer we started a collection drive of figs with local communities. Buying this pickle sustains a traditional foraged culinary tradition for future generations.
Our pickle is prepared using a traditional mountain recipe using a unique mix of spices.
