Perilla frutescens is a plant from the mint family that grows all over the higher latitudes of himalayan asia and eastern asia. Various parts of the plant are used in asian cuisines but the seeds are the most popular.
Perilla seeds are known as Bhanjira in Hindi. Perilla seeds are rich in dietary fiber and dietary minerals such as calcium, iron, niacin, protein, and thiamine. It has an especially high content of alpha-linolenic acid, omega-3 fatty acids and omega-6 fatty acid.
Perilla seeds are aromatic and they have a delicious nutty flavour. They are used as a spice and makes delicious chutneys and salads.
The people of Garhwal and Kumaon have been using the leaves and seeds of the Perilla plant for ages to spice up their dishes. The oil from the ground seeds can even be used for making pickles.
Organically grown in the upper reaches of Uttarakhand, including our upper Tons Valley, these seeds are a vegan substitute for cod liver oil.
How to use?
- Dry roast the seeds over a very gentle flame till you can smell the nutty aroma of the oils. Be careful not to burn the seeds.
- Roasted seeds can be eaten as it is, sprinkled on salads, made into chutneys, used in pickles…
