Granny Smith
Granny Smith is the sharp, tangy counterpoint to every sweet red apple, and one of the rarest varieties grown in India. From mid-September, a small number of high-altitude orchards in Uttarakhand and Himachal bring in this late-season harvest, after the early reds have had their moment.
Every Granny Smith on earth descends from one accidental tree. In 1868, Maria Ann Smith, a farmer’s wife in Eastwood, near Sydney, Australia, tossed the remains of some French crab apples by a creek on her property. A seedling came up. The apples it bore were like nothing else: hard, sharp, brilliantly green, and they kept for months without spoiling. Maria died just two years later, but local orchardists kept her chance seedling alive, and by the 1890s “Granny Smith’s seedling” was being planted across New South Wales and shipped around the world, prized because it survived long sea voyages that ruined other apples. A century and a half on, the old lady’s accident is the world’s benchmark green apple, famous enough that when the Beatles needed a logo for their record label, they chose a Granny Smith.
It is also a demanding tree. Granny Smith needs a long, cool growing season to develop its signature acidity and dense flesh, which is exactly what the high Himalayan valleys provide, and why so few places in India can grow it well.

What Granny Smith Tastes & Looks Like
Sharp, clean, and mouth-watering. Granny Smith is everything the sweet red apples are not: a bright, tangy acidity up front, a firm and dense snow-white flesh that snaps loudly, and a fresh green finish that resets your palate. If you have ever found red apples too sweet, this is your apple. It is also the undisputed king of the kitchen: it holds its shape in a pie, cuts the richness of a cheese board, and stays crisp in a salad.
Granny Smith is the marathon runner of apples, and unlike the delicate reds, it does not demand a fridge. Even at room temperature, kept in a cool, shaded spot, these apples comfortably stay crisp and fresh for two to three weeks, far longer than any red variety. Refrigerated, they will keep for a month or more. Either way, the famous tartness is at its brightest in the first two weeks, so eat freely.
